Brown butter?
Butter cooked at high heat for a few minutes until it browns, is my assumption
I use medium heat, and you have to keep it moving pretty constantly or it burns, often with some herbs or spices too. It’s really good.
Those must be some European eggs or something. The yolks are healthy orange.
There are several brands in the US that look like this. They cost more. Just look for eggs that are certified humane. There are no additional health benefits to humans based on yolk color, but it can indicate the chickens had access to a healthy diet. Or that they were fed dye.
I looked into some food science around eggs and the differences between caged, cage free and free range and there’s definitely no discernible health benefits to any of them. The only real benefit is to the chicken and their lives being vastly better with free range. I can afford it so I get free range eggs, mostly from the farms directly. There may not be health effects but they sure do taste a lot better.
Healthy happy chickens are the reason I’d prefer to have yolks like that
Pasture raised can look like that most of the time. When I go to the farmers market and get fresh local eggs they always look like that.
Ya. I’ve bought pasture raised eggs from aldi and Walmart recently and they looked nothing like that
Beautiful eggs!
Ah an egg sandwich! My current food love affair <3
I am gonna make this https://christieathome.com/blog/japanese-egg-sandwich/
Those are lovely.
A breakfast with great honor.
French scrambled eggs with basil and a little mozz and provolone would be good on that toast.
